This is a very quick, simple pickle, which is rather refreshing for summer and takes just a few minutes to prepare. Slice a cucumber thinly. Sprinkle half a teaspoonful of salt over the slices and leave them for 5 minutes or so. Pat dry the excess water and mix them together with 1 generous teaspoonful of sugar and 3 teaspoonfuls of vinegar and about 1 cm of grated ginger. Serves 2.
