    Potato and Leek Pasties

Ingredients

  • 2 small leeks
  • 4 or 5 smallish potatoes
  • 2 carrots
  • Pepper
  • Yeast Extract
  • Vegetable Stock
  • Rosemary
  • Pastry
  • Milk

Method

  1. Dice potatoes, carrots, and leeks.
  2. Boil in small amount of water.
  3. When beginning to soften add vegetable stock, yeast extract, rosemary and lots of pepper.
  4. When reduced down add milk and reduce again.
  5. Allow mixture to cool.
  6. Shape pastry into cornish pasty shapes and add mixture to pasty.
  7. Brush parcels with milk.
  8. Bake until pastry golden brown
  9. Serve with lightly steamed greens.
