    Radicchio Risotto

Serves: 2-3

Ingredients

  • 2 cloves garlic, crushed or chopped finely
  • 1 onion, finely chopped
  • 1 head radicchio
  • 2 courgettes, sliced
  • 1/2 can sweetcorn
  • 1 carrot, grated
  • 200g/6oz rice
  • 1/2 litre (3/4 pt) vegetable stock
  • oil for frying
  • 60g (2oz) grated cheese
  • Salt & pepper

Method

  1. Briefly fry the garlic in a large pan, then add the onion, frying for a short time until clear.
  2. Clean and finely chop the radicchio, add to the pan and fry for a few more minutes.
  3. Add courgettes and sweetcorn and cook for a few minutes more.
  4. Add the rice and stir thoroughly so everything is well mixed. Add the stock, stirring continuously for the first couple of minutes.
  5. Check the rice is cooked after 15-20 minutes. Season, and serve with the cheese.
